For your next picnic with friends, try replacing that tired old pasta salad with a couscous salad that's just as delicious and colourful.

ingredients

Couscous Salad :

  • 1/2 pack (75 g) Sliced Black Forest Smoked Ham Olymel Smart & Natural
  • 1/2 celery stalk, thinly sliced
  • 1/2 cup couscous
  • 1/2 cup boiling water
  • 1 green onion, thinly sliced
  • 30 ml (2 tablespoon) fresh parsley, chopped
  • 1/2 red pepper, small chopped

Tomato Vinaigrette :

  • 1/4 teaspoon pepper
  • 1/2 tomato, seeded and diced
  • 15 ml (1 tablespoon) olive oil
  • 7 ml (1/2 tablespoon) lemon juice
  • 1/4 teaspoon salt
  • 1 pinch sugar
  • 7 ml (1/2 tablespoon) red wine vinegar
  • 2 1/2 ml (1/2 teaspoon) Dijon mustard
  • 1 clove garlic, finely chopped

Couscous Salad :

  • 1 pack (150 g) Sliced Black Forest Smoked Ham Olymel Smart & Natural
  • 1 celery stalk, thinly sliced
  • 1 cup couscous
  • 1 cup boiling water
  • 3 green onions, thinly sliced
  • 1/4 cup fresh parsley, chopped
  • 1 red pepper, small chopped

Tomato Vinaigrette :

  • 1/4 teaspoon pepper
  • 1 tomato, seeded and diced
  • 30 ml (2 tablespoon) olive oil
  • 15 ml (1 tablespoon) lemon juice
  • 1/4 teaspoon salt
  • 1 pinch sugar
  • 15 ml (1 tablespoon) red wine vinegar
  • 5 ml (1 teaspoon) Dijon mustard
  • 2 cloves garlic, finely chopped

  • 1 1/2 packs (225 g) Sliced Black Forest Smoked Ham Olymel Smart & Natural
  • 2 celery stalks, thinly sliced
  • 1 1/2 cups couscous
  • 1 1/2 cups boiling water
  • 3 green onions, thinly sliced
  • 90 ml (6 tablespoon) fresh parsley, chopped
  • 1 1/2 red peppers, small chopped

Tomato Vinaigrette :

  • 1/4 teaspoon pepper
  • 1 1/2 tomatoes, seeded and diced
  • 45 ml (3 tablespoon) olive oil
  • 21 ml (1 1/2 tablespoon) lemon juice
  • 1/4 teaspoon salt
  • 1 pinch sugar
  • 21 ml (1 1/2 tablespoon) red wine vinegar
  • 7 ml (1/2 tablespoon) Dijon mustard
  • 3 cloves garlic, finely chopped

Couscous Salad :

  • 2 packs (300 g) Sliced Black Forest Smoked Ham Olymel Smart & Natural
  • 3 celery stalks, thinly sliced
  • 2 cups couscous
  • 2 cups boiling water
  • 5 green onions, thinly sliced
  • 120 ml (8 tablespoon) fresh parsley, chopped
  • 2 red peppers, small chopped

Tomato Vinaigrette :

  • 1/2 teaspoon pepper
  • 2 tomatoes, seeded and diced
  • 60 ml (4 tablespoon) olive oil
  • 30 ml (2 tablespoon) lemon juice
  • 1/2 teaspoon salt
  • 2 pinches sugar
  • 30 ml (2 tablespoon) red wine vinegar
  • 10 ml (2 teaspoon) Dijon mustard
  • 4 cloves garlic, finely chopped

Couscous Salad

  • 150 g sliced Olymel Smart & Natural Black Forest Smoked Ham
  • 1 cup couscous
  • 1 cup boiling water
  • 1 red bell pepper, finely minced
  • 1 stalk celery, finely minced
  • 3 green onions, finely minced
  • ¼ cup parsley, finely minced

Tomato Vinaigrette

  • 1 tomato, peeled, seeded and finely minced
  • 1 garlic clove, finely minced
  • 1 tbsp. red wine vinegar
  • 1 tbsp. lemon juice
  • 2 tbsp. olive oil
  • 1 tsp. Dijon mustard
  • 1 pinch sugar
  • ¼ tsp. salt
  • ¼ tsp. freshly ground pepper

instructions

  1. In a bowl, mix all vinaigrette ingredients with a whip. Add 1 to 2 tbsp. water if needed. Set vinaigrette aside.
  2. Place couscous in large bowl and add boiling water. Cover bowl with plastic wrap and let couscous expand for approximately 15 minutes or until all water has been absorbed. Separate couscous grains with a fork.
  3. Add remaining ingredients to couscous. Pour vinaigrette on couscous and mix thoroughly.
