Ham & Egg Salad with Crispy Bacon on English Muffins

- 300 g honey-smoked ham, diced
- 4 slices crispy bacon, cut in 2
- 4 eggs, hard-boiled
- 1/2 cup (125 ml) mayonnaise
- 3 tbsp. (45 ml) chopped parsley
- 4 English muffins, split and toasted
- Salt and Pepper
instructions
- Chop the hard-cooked eggs and place in a bowl. Add the ham, mayonnaise and parsley, season with salt and pepper and mix well.
- Spread the mixture on the English muffin bases, add 2 half-slices of bacon per sandwich, close and serve immediately.
