ingredients

  • 2 Olymel Pork Chimichurri Flank Steaks

Chimichurri Sauce:

  • 1 1/2 cups olive oil
  • 1/4 cup wine vinegar
  • 1/4 cup finely chopped French shallots
  • 1/4 cup chopped cilantro
  • 2 tbsp flat-leaf parsley, chopped
  • 1 tbsp finely chopped garlic
  • 1 tbsp dried oregano
  • 1 tsp dried thyme
  • 1 tsp crushed red pepper flakes, or more to taste

instructions

Chimichurri Sauce:

  1. In a bowl, combine all the ingredients. Set aside.

Flank Steaks:

  1. Preheat the BBQ to 260°C (500°F) over medium heat. Cook for 8 to 10 minutes over direct heat, turning regularly.
  2. Check the internal temperature with a thermometer and ensure it reaches an internal temperature of 65°C (150°F). Avoid overcooking, as it will dry out the meat.
  3. Let it rest, then slice into strips and serve with the Chimichurri sauce.
