Zucchini is the perfect substitute for dough in these pizza rounds with pepperoni. Better make a lot… or invite fewer guests!

  • 1 1/2 zucchinis, in round slices
  • 250 g (1 cup) pizza cheese, grated
  • to taste dried Italian herb mix
  • 125 g Olymel pepperoni, sliced
  • 140 ml store-bought Marinara sauce
  • 3 zucchinis, in round slices
  • 500 g (2 cups) pizza cheese, grated
  • to taste dried Italian herb mix
  • 250 g Olymel pepperoni, sliced
  • 275 ml store-bought Marinara sauce
  • 4 1/2 zucchinis, in round slices
  • 750 g (3 cups) pizza cheese, grated
  • to taste dried Italian herb mix
  • 375 g Olymel pepperoni, sliced
  • 425 ml store-bought Marinara sauce
  • 250 g Olymel pepperoni
  • 3 medium zucchini
  • 275 ml marinara sauce
  • 500 g cheese blend for pizza
  • 30 ml olive oil
  • Italian seasoning
  • Salt and fresh ground pepper

instructions

  1. Preheat oven to 375 °F (190 °C)
  2. Slice zucchini into 1.5 cm thick rounds. With a spoon, scoop out a shallow depression in each round. Brush with olive oil, sprinkle with salt, pepper and Italian seasoning and place on cookie sheet.
  3. Top each round with sauce, pepperoni and cheese. Bake 12 to 15 minutes or until cheese is melted and golden. Serve immediately.
